Vegan Scotch Eggs

I cheated and did this with potato flakes. Why? Cause I was feeling lazy. But you can make the potatoes any way you want. Garlicky? Cheesy? Whatever your heart calls to you.
You will need:
1 pack BE-hive Breakfast Sausage
Just Egg Omelette sheets
2 cups potato flakes
1 T vegan butter
Plant milk of choice
2 cups breadcrumbs of choice
1 c flour
Salt, pepper, garlic powder
Frying oil
CRAZY, scotch eggs aren’t Scottish. They sure are good though. These are thought of as a snack, so serve them as an appetizer or hors d'oeuvres.
First make mashed potatoes. I used potato flakes but you can make any ol’ mashed potato you like!
Traditional scotch eggs have a hard boiled egg wrapped in sausage, we’re going to do a just egg patty wrapped in mashed potatoes wrapped in be-hive breakfast sausage. Divide your sausage and cook your just egg omelette sheet.
When your potatoes are cooled, roll some around a piece of omelette into an egg shape and put in the freezer for an hour.
Take a plastic bag or some parchment paper and make a little envelope to flatten your sausage in. Press it super flat and place your potato egg in there, wrapping the whole thing in sausage.
Bread Dry, wet, and then panko (or breadcrumbs!) then fry til golden brown. These are traditionally thought of as a picnic snack, so throw a few in your pocket napoleon dynamite style and share with your friends.
