Loaded Vegan Calzone!

Get ready to crush your cravings with this loaded Vegan Supreme Calzone, packed with BE Hive’s killer breakfast sausage, pepperoni, tofu ricotta and a mountain of veggies, all stuffed in a crispy, golden crust that'll have you full and satisfied!

INGREDIENTS: 

2 Pizza Doughs - Store bought or homemade, cook according to their directions

TOFU RICOTTA:
Half a block of tofu
2 Cloves of Garlic
3 TB quality olive oil
1 tsp salt
2 TB Apple Cider Vinegar 
2 TB Lemon Juice
1 TB Dijon Mustard

½ Green Bell Pepper - sliced
½ Onion - sliced
½ c Mushroom - sliced
2 Stacks BE Hive Seitan Pepperoni
½ package BE Hive Breakfast Sausage - crumbled into small chunks
¼ c Black Olives - slice
4 Cups vegan mozz

Your fav red sauce to dip it in

Olive oil to brush it with

INSTRUCTIONS:

Cook the meats: Crumble and sauté the breakfast sausage until browned. Add the pepperoni and lightly heat. Transfer to a bowl and let cool.

Cook the veggies: Sauté the peppers and onions in a little oil, then set aside.

Make the tofu ricotta: In a food processor, blend all the ricotta ingredients until smooth.

Assemble the calzone: Stretch your pizza dough. On one side, layer the tofu ricotta, cheese, peppers, onions, meats, olives, and more cheese and ricotta.

Seal and bake: Fold the dough over, seal the edges, and bake until golden brown. Serve with your favorite red sauce!
