Make the Deli at Home: the PICNIC!
The Picnic sandwich is layers of savory seitan, melty cheddar, crisp veggies and those salty crunchy potato chips all stacked in a hoagie roll.
Let’s “MAKE THE MENU!” where we show you how to create our deli items at home using our seitan! The picnic is a staff favorite and features our roast beef and seitan bacon. When you bite into this cold sando, you’ll be transported to a kayak trip down the river, a tailgate, or that post hike lunch.
SERVING: For 2 large sandwiches
PREP/COOK TIME: 15 mins
ALLERGENS: Soy & Wheat
INGREDIENTS:
5 oz BE Hive Roast BEef (½ pack)
12 slices BE Hive Bacon (¼ pack)
4 slices of plant based cheddar cheese
2 T neutral oil
2 large 10” sub roll
1 cup Iceberg lettuce, divided
½ c shaved White onion, divided
1 sliced Tomato, divided
4 T Italian dressing
4 T Spicy brown mustard
4 T Mayo
1 C Wavy potato chips
Parchment paper
Masking tape
INSTRUCTIONS:
To make the sandwiches, you will prepare the meat and cheese filling one at a time then finish dressing the sandwich with the cold items at the same time.
Without cutting all the way through and leaving a hinge on your bread, Slice your 2 hoagie rolls lengthwise, butterflying them. If the bread you’re using is very thick, scoop some of the inside bread out to allow for more room in the sandwich for the fillings.
Spread mustard on one side of the bun, mayo on the other and set aside.
Heat a medium to large sized skillet over medium
Add in 1 T of neutral oil
Place 2 slices of cheddar directly down on the oil side by side, top this with 2.5 oz or 1⁄4 of your pack of BE Hive roast beef, then 6 slices of BE Hive Bacon layering it evenly. You want this pile to be the shape of your hoagie, this is what will lay on your bread. Once you are done laying your bacon down on top, your cheese will already be melted and ready to flip. Flip the pile over onto the bacon side and let this sit and toast up for 2 mins.
Scoop this into your first roll and repeat the above steps for your second sandwich.
Lay your 2 pieces deli paper or parchment paper down in front of you like a diamond with one of the points towards you
Place your sandwiches down and add lettuce, Italian dressing, tomato, onion and chips.
Take the bottom corner of your deli paper and begin to roll your sandwich up inside, much like a burrito or sushi roll. Press down and compact it to fit all that goodness in.
Once you’re fully wrapped, cut in half and enjoy!
