Loaded BBQ Cowboy Salad w/ BE Hive Bacon
It is PRIME summer cook out season, and nothing screams family bbq like a big ol’ summer salad. This big batch salad is quick to make and crazy delicious:

PREP & COOK TIME: 20 mins
ALLERGENS: Wheat, Soy
INGREDIENTS:
12 slices of BE Hive Seitan Bacon, cooked and chopped
2 Head Lettuce, Iceberg or Romaine, chopped
1 can of Black Beans, rinsed and drained
1 can of Kidney Beans, rinsed and drained
1 can of corn, rinsed and drained
1/2 Onion, red, juilienned
½ Red Bell Pepper, chopped
1 cups of diced tomato
¼ c Green Onion, Chopped
½ c Cilantro, chopped
1 cup Shredded vegan Cheddar
1 Avocado, Chopped
BBQ Dressing
1 Cup Vegan Mayonnaise
1/2 Cup of your favorite BBQ sauce
3 TB Spicy Brown Mustard
2 Tablespoons Lime juice
Salt & Pepper
INSTRUCTIONS:
First things first, cook and chop your BE Hive Seitan Bacon!
Next prep the rest of your veggies.
Assemble the dressing by whisking all ingredients together until well combined.
Grab your biggest salad bowl and let’s start assembling.
Lettuce on the bottom, then piles of the rest of your ingredients, ending with a sprinkling of green onion and cilantro.
